Why are the episode images being removed for season 2's episodes?

Because they're bad images. In this backdrop for episode 2, the man's face looks absolutely awful if you zoom in. In this backdrop for episode 3, Diego Luna's face looks like it was upscaled and then smoothed.
I know they're the official images used by Disney+ but they chose two of the worst possible images.
