Not to mention that all holidays are pagan and were just co-opted by Catholic occupying forces.

The "Good Witch (2015-)" premiered as a mid-season show (January-May). The later seasons started to be broadcast later (April-August), and could be considered as a summer replacement.
Each season also had a Halloween Special in October.
There was a Christmas movie, "The Good Witch's Gift (2010)", but that was before the television show.
It is part of the "Good Witch" movie series. After the seventh, a television series was produced.
Hallmark has there own series of Christmas movies and I don't expect them to also produce an extra movie or episode for the "Good Witch" with that theme.
Of course, if they wanted to, they could mention buying early Christmas presents or some magical creature living in the trees, that are being chopped down for the Holidays.

Arbor is the tree holiday. Or the winter solstice. Or a Sadie Hawkins dance. Something other than the usual sitcom holiday special
