(1) Why did Kim blow of Paige at Mesa Verde? Isn't this her bread-and-butter client? Considering how badly she wanted this account, how hard she worked, and what she went through to get it, can't understand why she would be so non-responsive to a crisis involving them.
What am I missing?
(2) Why is Kim handling "street" client? Is she trying to atone for some moral wrongdoing--if so, what?

For whatever reason, she prefers to defend the little people, possibly to atone for all the nefarious sh!t she's loosely a part of with respect to Slippin' Jimmy, possibly because it's just more fulfilling for her.

More and more it seems as if she wants to give the
to the Big Guy. Also (for some reason), I get the feeling that she is deliberately giving the Mesa Verde team some bad advice. When they were discussing the possibility of including“Wyoming”, it was just something about the way she answered that just didn’t ring true.
Also (I know this is out of left field), but I get the feeling that she is trying some “end run” on the Mesa Verde project that’s going to leave Paige, et al. assed-out.
Finally, the way things seem to be playing out—instead of Kim leaving Jimmy because of his shady actions, maybe she helps usher him even further down that shady path--that path that leads to the Saul we know from BB

Wow, that's really interesting, I never thought of that. I used to try and guess where things were going with BB and was always wrong, hahaha. Yeah, I got a sense that she was either lying or at least being cagey about something when they asked for her advice about that bank. Her idea to bombard the judge with letters and cards was real con artist type stuff, so I could see her getting deeper into that territory.
