I've watched several episode discussions online, but nobody has mentioned the scene with Sansa and the Hound. After Sansa observed the Hound turning down the girls that Podrick sent over to him and Tormund, I thought for a moment that Sansa had decided that this was her time to try to bed him. That scene just seemed kind of strange to me with the way she reached across the table to grab his hand.

I got the same vibe as well esp when they focused on her holding his hand. But mostly it was like respecting & admiring each other now as equals etc. Did make me wonder if Sansa will end up with anyone...Tyrion?

I agree with you and the OP, except that I don't think it was simply a gesture of friendship nor romantic interest. It seemed to me it started as a way to communicate empathy, which he rebuffed by saying he had heard she was "broken in rough". This was a harsh rebuke of her interest in befriending him. Next it seemed he genuinely mourned the loss of "little bird" and confessed his part as a way to protect his own vulnerability. She then rebuffed him. Then, after a curt reply, literally rose from his level, once again separating their stature and status.
The interaction started as empathy, morphed quickly through a terse powerplay, and ended with two people separated yet again. That's the beauty of these scenes, we can read different things into them based on what we know/believe of the characters, and indeed what we bring to the scene from our own experience/attitudes. All that said, I thought it was quite significant on it's own standing, and was certainly more than "nothing." :)
